Japanese term for a type of Japanese high-carbon steel (Hagane), manufactured by Hitachi Metals Ltd. Graded at Blue Steel #1, Blue Steel #2, and Blue Super. Named for the blue paper put on the steel at Hitachi factory. Commonly used for Honyaki knives.
